    Help... I'm no betty crocker

    We had a ham. Then my dad and his wife brought a ham and a turkey. There are so many left overs and I don't know what I can make with them. I don't think ham or turkey sandwiches for the next 2 weeks is feasible. What else can I come up with, though?? Anyone have any yummy recipes with variations so the food will not sit in the fridge until it gets icky?? I was thinking about some kind of stew. That's all I can come up with.

    This is what I like to do with diced ham for breakfast.

    Dice up the ham very itty bitty. Brown it a bit. Add eggs and scramble it all up together. When cooked, sprinkle a bit of cheddar cheese on top. Yum!

    If I come up with anything else, I'll post here.

      Check out the "Lifestyle and Adjustments" section of the forum.... I believe there is a thread there FULL of receipes for you to use ham/turkey leftovers..................

      ex: ham dumplings
      scalloped potatoes and ham
      ham salad
      ham and pinto beans

      Check it out.............

      PS, don't let any of it go to waste.........dice it up and freeze it until you need it...... do it in slices, chunks, etc..... use the bones too (if any).....

        not sure of the spelling, but turkey tetrazzini is great with left over turkey. cooked peas, turkey, macaroni noodles, cheese (I use shredded cheddar) and turkey broth (or chicken broth) bacon, onion and a little butter. Saute the onion and the bacon (cut up) in a small amount of butter ( I used cooking spray since I am weight watchers gal) Cook the noodles and the frozen peas (I throw the bag in the microwave for about 5 minutes to soften them up) and drain. Put in a casserole dish, then add the diced turkey, a small amount of broth (the cheese adds juice) and the sauted onions and bacon and then the cheese and heat it up. Serve with french bread and a salad. My family always loved the leftovers.

          you can add green pepper and red pepper for color as well

            I would dice or slice alot of it for the freezer because you will be too sick of it too eat for two straight weeks.

            Spinich pie -

            Ingredients:
            4 large eggs
            2 10-ounce packages frozen choppen spainach
            2 medium onion finely cropped (ea. about 4 oz)
            3 T. olive oil
            1 pound cooked ham. diced [1/2 inch
            1 1/2 cups grated Parmesan cheese
            1 cup of Ricotta cheese
            salt & pepper to taste
            pastry for a 10-inch double-crust pie (based on 3 cups flour)
            Directions:
            In a large bowl, beat eggs until foamy.
            Cook spinach according to package direction; turn into a strainer to drain and press out liquid.
            In a 10-inch skillet, in hot oil, gently cook onions until wilted - about 5 minutes. Stir spinach and wilted onions into eggs with ham, Parmesan cheese, ricotta cheese and salt & pepper.
            Line a 10-inch pie plate with half othe pastry. Add spinach mixture. Cover with the remaining pastry; cut 6 one-inch vents in it; seal and flute edges.
            Bake in a preheated 425-degree oven on the rack below center until golden - about 40 minutes. Let stand on a wire rack 10 minutes before serving.



            Scaloped potatoes and ham - I just buy the scaloped potatoes in the box from the store and add the ham. But to make from scratch layer sliced potatoes, ham, cream sauces and cheese in a pan and bake

            macaroni and ham - combine diced ham, peas and cooked macaroni. pour a cream sauce (flour, butter, milk, salt and pepper), top with toasted bread crumbs and bake.

            My husband is allergic to turkey so I can't help you out much there.

              Heather, freeze part the meat in recipe-sized portions (2 cups or so is good) and store in your freezer.

              Wrap the portions of ham or turkey in plastic wrap, then wrap in a double layer of aluminum foil to prevent freezer burn. Label with a permanent marker. Done up this way, the leftovers will last in your freezer for six months

              When you're ready to use one in a recipe, you can defrost in the refrigerator for 24-48 hours or use the microwave to defrost. Works like a charm!

                I always liked a turkey or ham quiche. You could make some meat pies-- like calzone but with turkey or ham-- use them for lunch.

                  Chicken Divan made with Campbell's cream of chicken soup is yummy...I would think it would be just as good with turkey. I don't make mine quite the same way as what I just found on the web. (I use mayonaisse instead of the milk and season the soup mixture with curry powder) And I use Colby cheese. I find the butter/bread crumbs optional...they are good but not necessary.



                  PS--I like the Turkey Tetrizzini idea too...never made it myself...gonna try that!

                    Turkey enchiledas are tasty with left overs and fun to make if you enjoy bieng in the kitchen I try to get friends or g/f involved when I make them so its a quality time thing as well.

                      My favorite web site when I have leftovers is allrecipes.com . You can type in the ingredients you have on hand and the ones you want left out. Plus there are comments from people who have tried them. I use that website to make a monthly menu for our family. It saves money for us.

                        I love allrecipes.com! When I'm feeling uninspired and have no idea as to what to make for dinner, that's where I go!

                        And when I'm in the mood to try something totally different or fancy, I go to foodnetwork.com.

                          I was thinking the same thing. We have a bunch of left over ham and tomorrow morning we'll have ham and cheese omlettes. Yummy. I can't wait.

                          Other than that I'm not much help. My mother in law always tells me to freeze stuff but I usually try to cook it within a few days or else...
