    I was introduced to sea foam when I lived in Seattle. *ALWAYS* loved this candy. It's also been called honeycomb candy because the baking soda creates a honeycomb texture. It's wonderful!


    2 cups light corn syrup
    2 cups packed brown sugar
    4 teaspoons baking soda
    1 (12-ounce) package dark chocolate chips
    1 tablespoon vegetable shortening

    Line bottom and sides a 13 x 9 x 2-inch baking pan with lightly buttered aluminum foil. Set aside. Combine sugar and corn syrup in a large, heavy cooking pot. Cook over medium heat, stirring constantly, until sugar dissolves. Continue cooking, without stirring, to 300*F (150*C) on a candy thermometer, about 15 minutes. (A small amount of syrup will separate into brittle threads when dropped into cold water.)

    Remove from heat and stir in baking soda, mixing well. Mixture will foam up. Quickly pour into prepared pan. Allow to set at room temperature until firm. Invert pan and peel off foil. Break into pieces.

    Melt chocolate and shortening in double boiler over simmering water; dip candy pieces in chocolate. Place on waxed paper-lined baking sheets and allow to dry at room temperature. Store tightly covered at room temperature.

    Makes about 2 pounds candy.

      Okee Dokee Kam. That is like 100% sugar. I wll try that sometime. When I first heard of SeaFoam I was thinking of sea weed with sugar in it or that foam that comes up on the sand in the waves on the beach.

      When you mentioned honeycomb, that sounds like it would be light & fluffy or maybe crunchy. Or is it supposed to be more like a candy brittle?
      Just want to know how the consistancy & texture is supposed to turn out because boild candies & cookies are tricky.

        B12, I bet there is a special candy factory & store like that in every town. or maybe Fanny Farmer is just well known in the Norteast?

        I have been in a couple of places like that with the wooden glass cases & they have unique items that you would not find in just your regular grocery isle.

        I can relate to your special trips on the train with your Grandma, very well. That made me smile tonight.

          I'm kinda sad we won't have many trick or treaters this year as most kids go to my old neighborhood to trick or treat and we just moved out in the country. I just love seeing the little bitty kids all dressed up and their pets, too. They are just too adorable.
          I am going to be the toothless city kid & it is not due to candy. My dentist is killing me lately, so I may as well enjoy myself while I still have some teeth left.

          I am going straight to the grocery store & sift though the halloween candy in the shopping carts. I can pass it around all thru Christmas. It is so silly, but it has become a tradition now that I have learned that is when to buy it.

          I saw a little girl on her first halloween in a stroller tonight being pushed down the street with a bunch of other kids. The parents had dressed her up like a bunny rabbit with ears on her head & tiny whiskers on her face.

            NOTE..................

            You can freeze Halloween candy and Christmas candy...... it keeps very well......

            We've done it for years...... just thaw it out good before using it....

            (Be sure to pull all the air out of the freezer bag with a straw before you freeze it)..........

              Sea foam, if made properly, sorta has the texture of malt balls, but tastes NOTHING like them. Sea foam is not thin like brittle, but anywhere from 1-2" thick, relatively easy to break into smaller pieces and melts on the tongue, putting you into a fog of ecstatic chocolatedom.

                  I don't ever remember having anything quite like that or even seeing it before. I know what maltballs are & I like them so I am sure I will like SeaFoam.

                  That is what I keep saying...at my age...

                  Yes it is painful but only the first injection. It is painful if you do & painful if you don't, if you know what I mean.

                  I want it but I shouldn't. I need to try this but maybe later but I can't wait. It hurts to wait & it hurts to TAKE THIS CHOCOLATE now. ROFL!

                    What is that famous egg?

                    It is a chocolate egg & it is really good. Not for easter candy but for anytime. I think it starts with a C & it is expensive. I only had that one time but it was one of the best chocolates I ever ate.

                    I wanna say Creme or Cary.... something...I am almost sure it had something else creamy in the middle & started with a C.

                          Love Cadbury candies.................smooth, creamy...........

                          Also had the opportunity to get some chocolate from Germany and France recently (GI friend brought some back).........

                          Sure taste different than ours............ ours is VERY SWEET compared to the rich chocolates from overseas........

                          Let's just face it - I'M A CANDY LOVER & DOG LOVER!!!!! Those were my calling in life.............

                          Now if I could just figure out a way to "support" myself and my habits without having to work for 50 years - it would be great!!!
