    request for recipes

Not being a big fan of casseroles, I like to see the different foods on my plate. BBQ chicken in the oven is about the easiest recipe there is, what other chicken dishes do you cook in the oven that are as easy? What type of sauce are you using?
I used to have a life, now I have grandkids.

Believe it or not, I have never had a can or box of anything in my pantry and I hate freezing raw meat. I worked a demanding job and reared 3 kids by myself for 25 years and they never even had a hot dog, hamburger or casserole for dinner.

Now, admittedly, I have a passion for cooking. But, even if you don't, here is the secret and you only have to spend 2 days out of the month cooking. I would involve the kids and make it a learning to cook day.

Go to the discount store and buy tons of good resealable bags and all size plastic containers. I like the Glad ones.

Here are two recipes. If you want more, I have lots of them.

    Chicken
Wash (I have OCD, lol) 6lbs. of chicken parts, dry them and put them in two large oven pans (I use disposable, what the hell).
Cut up a small bag of potatoes, 3 large onions and place them over the chicken. Pour about 3/4 cup of good olive oil over it, sprinkle with salt, pepper and paprika. Cook at 375 until when you cut open a thigh, the juices run clear. Don't overcook the chicken.

Place some chicken, potatoes, onions in large container for family dinner. For single dinners, put favorite pieces of chicken, potatoes, onions in plastic bags. Cool before freezing.

    Sausage and Peppers
Prick 5 lbs. of hot or sweet sausage with fork. Cut up loads of green peppers and onions, douse with olive oil, salt and pepper and put in separate pan and bake both pans in oven til done. Take the sausage out of pan and mix in with onions and peppers, leaving the grease to throw out.
Again, use the large containers for family dinner and put single servings in plastic bags.
Both of these recipes freeze really well for 2 months or longer.

These aren't dinner recipes but baked goods.

Whenever I bake cookies I use the big bag of chocolate chips and I make a double or triple batch. I cook about a dozen cookies for my family. Roll the rest into 1-2 inch in diameter logs. I wrap those in wax paper and then I place them in freezer bags and freeze. Then when I have company or I just want cookies I slice a log (I freeze mine so each log makes about a dozen cookies). I have a quick and easy treat for company and I make sure that my household isn't eating a whole batch of cookies in just a few days.

In the fall we love to go apple picking. Over the next week I peel all the apples and throw them in a freezer bag with sugar, cinnamon and nutmeg and freeze. Then when I want apple pies for thanksgiving and Christmas all I have to do is buy a pie crust (or pull one of the frozen balls of pie crust out and roll, since I made about 10 of those last time I made crust), thaw the apples and I have homemade apple pie.

I also have frozen soup and frozen lasagna in my freezer.

I love to cook, but I cannot bake. Only one that eats my attempts at baking is the dog.

I like to quarter a few potatoes, add chicken breasts, dump italian dressing over the top, add some parmasean cheese and bake it. It is really good! One of my favorite recipe's!

I also add cream of celery to my chicken and bake it, then use the cream of celery to put on top of my mashed potatoes

That reminds me of a pork chop recipe.

Dredge boneless pork chops in flour. Dip in Caesar dressing and place in a baking pan or oven proof dish. Top with grated parmesan cheese and bake.

My husband cooks but he get most of his recipes from www.kraftfoods.com the stuffed cornish hens are the best it has a apple jelly glaze. Not a long time preparing it involved.
Sometimes life make you deal with ugly and hateful people ,just think of them as sand paper. They may scratch you and rub you the wrong way but eventually you end up smooth and polished and the sand paper becomes old and worn out.

foodnetwork.com is a great website. When I have an ingredient that I want to use I put it in the search field and see what recipes come up, then look for something easy that I have everything on hand. I've tried some great new recipes that way that have become family favorites. Turkey meatballs, lemon chicken, pork tenderloin with mustard sauce. Give it a try.

                  We love our crock-pot.

In the crock pot I add a beef roast, some french onion soup mix, some au-jus flavoring and let it cook. When I get home I shread the beef with two forks and make french dips or hot beef sandwiches.

In the crock pot put a pork roast and some barbecue sauce. Great bbq sandwiches

I make chili by adding seasonings, ground beef and lots of beans and let it cook all day

I add browned chicken (now pork chops since my husband is allergic to poultry), rice, water, cream of mushroom soup and a splash of milk for chicken and rice.

We put short ribs in with barbeque sauce and cook all day. I pop it under the broiler for a few minutes when we get home and I have ribs that just fall off the bone.
