We only have one trustee appointed through the court. We were asked for 6 months of pay stubs, 6 months of bank statements, 2 years of income tax returns, and any info we had on creditors. However, if we did not have that it was okay as long as we knew who the original creditor was or if it had been handed over to collections.

You have the local bankruptcy trustee who is assigned by your district. Above them is the UST. Either of them can object. Depending on your district the requests for such data as you mention could be the normal.May 31st, 2007: Petition Filed by my lawyer
July 2nd, 2007: 341 Meeting Held
September 4th, 2007: Discharged and Closed.

Cool, just FYI, I had to supply all of that and a ton more before the trustee even looked at my filing: he sends a very specific and lengthy list of docs he wants submitted to him *prior* to the 341. If that's all your trustee is requesting, you're getting off light indeed.
It is, as JRScott pointed out, normal for each trustee to create his own standard list of docs, whatever he feels he will need to give him a good picture of your true financial situation, and that does vary from trustee to trustee.
Also, the UST is the trustee's boss, and generally doesn't have much involvement in consumer Chapter 7s unless there is something else going on as well, such as exceptionally high amount of debt, or business related debt, etc. Chances are good that if your debt is less than $100k and is all consumer related, you will never even clap eyes on your UST.
Hope this helps. Good luck!!!Nolo Press book on filing Chapter 7, there are others too. (I have no affiliation with Nolo Press; just a happy customer.) Best wishes to you!
