I don't have specific knowledge on New Jersey's exemptions, however I can direct you to a website that I have found to be correct and listing the current inflation-adjusted values for Michigan and federal exemptions. However, since NJ has the stingiest exemptions in the whole country, luckily you can also elect to use the much more generous federal exemptions instead - http://www.bankruptcyinformation.com/exemp-fed.htm

Depends on which set of exemptions you go with and what types of assets and equity you need to protect.

Best thing you can do is make appointments for free or low cost initial consultations with 3-4 NJ bankruptcy lawyers in your area. You'll learn a great deal about what's going to be possible and what's not in your case.
