In August, I had over $900 in car repairs and I moved across country, which cost me about $2,500.

Do I consider these expenses as part of my 6 month look back and average for my monthly expenses? If so, where is the best place to include them?

No, because what will be examined is your ability to pay based on your forward looking expenses, unless you move all the time because of a particular job. Your vehicle maintenance expenses should be derived from what you basically pay yearly to maintain and fix your car. Go back 1 year or two even if possible, divide the total by 12 = vehicle maintenance and repair.
