Between now and when I file? I am dropping off all my paperwork with the atty this weekend and we will file in the next 4-6w (depends on when this baby decides to join the world). If any of our debts get moved to outside collections before then, is it going to cause a problem? Meaning if I don't have the "owner" of the debt right because of timing or something will it still get discharged?

Not really, your obligation is to file out the petition with the information you have available at the time.

If one does pop-up you, you can simply amend your petition if needed. But if you notified the original creditor, the debt is still discharged. If you do get a letter from a CA around the time you file, you can simply mail them a copy of the first 2 pages of your petition to prove you have filed BK.
