If i think i need to amend an amount owed to a creditor, do i just file a copy of an amended schedule, or the whole thing again? Also since I have no attorney, am I required to send copies of my petition to anyone? Like the trustee or anything?

Amounts change monthly. List the creditor and a general amount owed. You do not amend unless you listed the wrong creditor"You once asked me for advice. You want some now? Never pass up a good thing." Lieutenant Jean Rasczak, Starship Troopers

You don't need to amend to change the amount owed in a chapter 7.
In chapter 13's you should strive to list an accurate amount owed because it effects your repayment plan, but even then, the creditor still need to file proofs of claim.
In a chapter 7, you can even list the amount as "unknown" and no one is going to care.
