So the last day for creditors to file claims is 1/7/2017. As of now I have only had 2 out of 11 file claims (Discover & AMEX). What are the chances that the remaining will file by the 7th of February. I'm in a 100% plan so keeping my fingers crossed.

I had about 4 file on the last day. I also had 2 large creditors (over $10K each) not file a claim. Unfortunately you'll need to wait until the last minute to see which creditors file or don't file.
(The last day for creditors to file in your case will be 1/9/2017, because 1/7/2017 falls on a weekend or holiday.)

Most of my creditors sold to a third party company and then that company filed so it took a little longer for those third party companies to file and a few of filed right at the end. But I did have one creditor not file, and for some reason the state of California never filed for my taxes but my lawyer said they will pay the State of California anyway since it's taxes. The one creditor that didn't file was big one though.
